I just read a recipe by a fisherman in Hawaii and it said to soak the salted salmon in cold water for 3-6 hours before assembling the salad, changing the water often. This rehydrates/softens the fish and removes some of the salt. The last time you change the water, you add ice. When the fish is really cold, it's easier to dice. "

My family loves this cake. I do everything exactly as directed, EXCEPT...I replaced the ganache with ice cream. With the whipped cream and the chocolate glaze, this cake is a perfect ice cream cake. We live abroad and had to become our own Baskin Robbins. ;) Thanks, Food Network!
