Reviewed Quick Chick and Noodle Soup

Dec 9, 2013 on FoodNetwork.com

I made this for dinner last night. In a word...delicious! Instead of stock, I used 4 cans of Swanson low-sodium chicken broth and added two extra carrots. I salted to taste. It was really perfect. We're going to have the leftovers tonight with a grilled cheddar cheese sandwich. What could be easier than that?!?!?! Happy holidays everyone!

Well, it's a chilly evening here in So. Cal (brrrrrrr...57 degrees at the moment), so I decided to make some comfort food. This recipe is fantastic! I did do some minor tweaks...I deglazed the pan with some good red wine after the beef and onions cooked for an hour. Also, I added some baby yukon gold potatoes with the carrots PLUS I roasted some baby...

She roasts them in the oven for 35 to 40 minutes...the exact amount of time needed for the potatoes. Try it this way (in the dutch oven over the stove top) and I think...

Fantabulous! Very tasty and moist! We enjoyed this for dinner last night. I served this along with Ina's Fingerling Potatoes with Dill -- and a side of peas -- gotta get your greens in there. It was a hit. I cut the recipe in half and there were plenty of leftovers.

Cheers all!"
