Reviewed Prosciutto Wrapped Endive and Radicchio with Balsamic-Fig Reduction

"This was absolutely terrible. I have never said that about a Rachael Ray recipe, but it is unfortunately the only way to describe it. The endive was flavorless, the radicchio was so bitter that I couldn't eat it. The balsamic fig reduction was ok and simple to make, but did nothing to redeem the rest of it. And for a recipe coming from an episode called "curb your carbs," I think figs were a poor choice. Does she have any idea of the carb count of just one fig? For the cost of the ingredients of this dish adding up to the horrendous result, do yourself a favor and PASS.

Reviewed Hazelnut Crusted Chicken with Gorgonzola Sauce

"In theory, this dish should be amazing. I absolutely love all the elements that go into it. However, in practice, chicken just does not stand up to the bold flavor of gorgonzola. All in all, it was a so-so dinner made with super expensive ingredients. I love Rachael Ray, but this recipe is NOT a keeper for me.

Reviewed Low Carb Beefed-Up Meatloaf

"This meatloaf is amazing! I took the advice of a previous reviewer and added fresh spinach when I layered it, because it sounded good, and I doubled the garlic, because I love garlic. Otherwise, I followed the recipe as it is written. So yummy! This one is a keeper.
