"I saw this recipe and decided to try it. ive never tasted butternut squash and did not know what to expect. my husband and i are trying to eat healthier and this was perfect.
I omitted celery and added green squash and when it was done and pureed i added chopped roasted red pepper and cubed boiled chicken (no seasoning, left over from last nights dinner) i think both the red pepper and chicken added great flavor and my 2 year old daughter even enjoyed it!
the chipotle sour cream was wonderful and would be great on crackers!!!
