My Activity

Reviewed Wilted Spinach with Garlic

"A very quick, easy, healthy side dish. Two comments; be generous with the spinach, it reduces significantly when it wilts, and 2; go light on the nutmeg, it adds a great flavor but at the portion given in the recipe, it is somewhat overpowering. Otherwise, all in all, a great recipe."

Reviewed Rice Pilaf

"This dish came out pretty good, but since I substituted brown rice for white, the rice was undercooked and tough. Next time I would boil an additional 10 minutes or so. I also didn't add any nuts, as I didn't have any on hand."

Reviewed Grilled Tilapia with Cucumber Yogurt Sauce

"I love this recipe !!! It took two attempts to grill the tilapia properly (the first attempt the filets fell apart trying to flip them during grilling), but it didn't affect the taste.

Reviewed Whole-Wheat Penne with Turkey and Asparagus

"Very easy, healthy, and quite tasty. Instead of the marinated turkey scallopini, I sauteed ;lean ground turkey breast. I also added sliced mushrooms with the asparagus called for in the recipe and topped the dish off with shredded parmesan cheese."

Reviewed Turkey Robinson

"Overall, this is a good, healthy recipe. I made a few modifications; since I didn't have garlic infused olive oil, I used EVOO and substitutued garlic salt for the kosher salt. Still, came out somewhat bland, had to re-season w/salt & pepper when it was finishing cooking. Also added a bit of red pepper for color and crunch. Substittuted pinto be"

Reviewed Chicken and Broccoli Stir-fry

"This is basically a very good recipe. I made some modifications based on what I had on hand. I substutited brown sugar for cane sugar, omitted the sherry wine, and added red and orange peppers for color and just more veggies for good health. For my first attempt, the veggies needed to be cooked longer, they were a little too crisp, and the sauce"

Reviewed The "Rachael" Omelet

"Excelent, simple & very tasty! My first attempt at a Food Network recipe and it was a snap. I left out the brocolli, and substituted a canola/vegetable oil blend for the clarified butter, and red pepper for the green pepper. Came out kind of like a cross between scrambled eggs and an omlette, but tasted great and defenitely will be one of my fav"
