"I'm trying this recipe today with a few changes: a gingersnap crust, I'll mix my flour and sugar together so the batter doesn't over mix and maybe some dulce de leche... I always bake cheesecake with a water bath on the bottom of the oven and leave it in the oven as it cools. Always mix your ingredients on low speed, and run a knife around the edge before cooling to avoid cracks! I expect great things from this recipe...
