Love this chili!! I make it all the time. I have made it with roasting the chilis and without roasting the chilis, and didn't notice too much of a difference. So if you don't have the time or don't want to put forth the effort, I wouldn't worry about it. Also, I never use the cubed beef, just the ground beef and hot italian sausage. "
