Reviewed Fresh Corn Casserole with Red Bell Peppers and Jalapenos

"Oh, boy!! Soooo good. Not complicated, easy to find ingredients, feed a crowd, what more could you want? I might add one more jalapeno-we like that little extra burn! Although fresh corn is best, you could use frozen corn, out of season. ""

Reviewed Grilled Zucchini Salad with Lemon-Herb Vinaigrette and Shaved Romano and Toasted Pine Nuts

"Love, love, love this recipe! We didn't have zucchini this afternoon, but did have yellow summer squash, which was equally as delish as when we used zucchini. We have also used shaved Parmesan instead of Romano and it was also lovely. I can think of all kinds of variations. The most time consumed was grilling the squash. Wow your dinner guest"
