Excellent pork roast recipe. I used a 5 pound boneless pork loin roast and made a few minor changes. I used a spice rub of 1 teaspoon each dried rosemary, dried thyme and dried basil with some salt and black pepper. I rubbed this all over the roast prior to browning. Have made these once and will be making them again very soon-they are the perfect Valentine's Day treat! However, here in New England, home of the whoopie pie, I made the more traditional filling , which includes marshmallow fluff, instead of the cream cheese filling. They came out perfectly!

Made these yesterday for a lunch with friends today. The shortbread crust was perfect, even after a night in the refrigerator-nice and crisp and didn't get soggy at all!
