Reviewed carrot cake with ginger mascarpone frosting

I first made this at Christmas last year. It is the best carrot cake I've ever had. It is heavenly! My family wants no other recipe now. The crystallized ginger and the mascarpone make this cake divine. I had no problem whatsoever with the frosting being runny. I used the recipe in the book, I haven't cross referenced it with this posting....

Delicious! Very rich and satisfying. I added two cloves of garlic and a sprinkle of thyme and a few tablespoons of chopped parsley. This was easy to make and would be a great dish for company. I would like to try it replacing most of the cream with chicken stock for a lighter version. This recipe is a keeper!"

This was so delicious! Next time I will use a heavier bottomed pan, my pan got too hot and had an inferno of smoke rolling off it and cooked fast ! Still, the salmon turned out perfectly. The lentils and vegetables were delicious. We had some left over and will be eating them with panko crusted pork chops tonight. Thank you for yet another great"

Total home run! These were moist, melt in your mouth deliciousness! I'm addicted! After reading reviews I decided to add 3/4 t. more salt because we like the flavor. Shaped the rolls mid morning and put them in the fridge. Brought them out about an hour before dinner to come to room temp and finish rising. Just before baking I brushed the top"
