These are fantastic and so easy! You can quickly put them together in a snap if someone drops by... I maid them as called for in the recipe, and then have made them again using some "melted" plum jam. The possibilities are endless, depending on your taste. Anyone can do this.

This is so good...light, refreshing, and a nice difference from regular tossed salad. I found the quinoa too watery after microwaving, so I just put it back in the sieve and gently pressed out the extra water. Also, I used red lentils (what I had on hand) and they were done in 20-25 minutes rather than 30, so I suggest just keeping an eye on them....
