After making turkey for 36 years, I decided to switch it up yesterday using this recipe. It is without a doubt the best turkey I've ever tasted. It looked just like a magazine picture, was moist, flavorful and easy to carve. The family went crazy over it. I doubled the rub for my 23 pounder and covered it with cheesecloth soaked in butter to roast....

My family absolutely loved it! The most important point that I think was missed in this recipe was that you must SEASON your hash browns when you make the crust. We had to salt the plates before serving to bring it together. The filling was excellent (Searing the ham is a good idea) Overall I think this an fabulous dish that you cannot mess up. I "
