"I really wasn't feeling this soup the first night I made it. I was on a budget and skipped all the toppings and subsequently it was a little boring, even after I had thrown in corn and green chiles to give it a little more flavor. But when I had leftovers two nights later this soup had really come into its own, and tasted great. If you can, I'd recommend making this a day or two ahead of when you'd like to serve it. Also, be sure to stir this soup frequently, the tortillas can easily burn on the bottom of the pot.
