I followed the recipe exactly; made this twice now. I used frozen shredded coconut the 2nd time, and I prefer the frozen coconut (there is no little dry crunchies in the cake with the frozen coconut). Tastes wonderful. I loved this. I did use chicken stock instead of water for the grits, and I think I had a bit more shrimp than called for. It was excellent, but very, very filling. I can't say anything bad about this recipe. Personally, I think I will cut down on the amount of grits next time.
