"Delicious! These coconut shrimp are restaurant worthy. My local store does not carry jumbo shrimp so I end up using a medium sized shrimp. It's definitely more prep but it is worth the time and effort. I usually make my own dipping sauce with pineapple, cream of coconut and a couple of other ingredients. ""

"The first time I made this it did not puff. I used a hand blender to mix the ingredients. The second time I used a traditional blender and blended the eggs on their own before adding the other ingredients. It did puff up this time. It's something different to make for breakfast and I like that it uses normal, every day ingredients."
