We loved it! We're in Yuma so have access to fresh spinach year round and are always looking for new ways to use it. Moist and delicious, the texture of the spinach mixture was "fluffy", similar to spinach souffle (although MUCH easier to make, with a wonderful "crust" of parmasean cheese on top. This was so easy and so good! Loved that I could throw some things together in the pan and then forget about it for six hours. Loved even more that after pulling the pork I could let it sit until halftime (nothing worse than having to time a meal to the game!) Nice heat -- but not too spicy. Chicken was much easier to do than I had expected! Waffles were great, too! Can't imagine someone saying that the batter was too thick -- unless they had problems with measurements. But, of course that would be a personal problem rather than a recipe issue.
