"We loved it! We're in Yuma so have access to fresh spinach year round and are always looking for new ways to use it. Moist and delicious, the texture of the spinach mixture was "fluffy", similar to spinach souffle (although MUCH easier to make, with a wonderful "crust" of parmasean cheese on top. The eggs were a wonderful surprise that we all love"

Reviewed Spicy Pop Pulled Pork

"This was so easy and so good! Loved that I could throw some things together in the pan and then forget about it for six hours. Loved even more that after pulling the pork I could let it sit until halftime (nothing worse than having to time a meal to the game!) Nice heat -- but not too spicy. Reviewed Jamie's Coconut Cake

"Love it! I'm one who usually bakes from mixes. Found this one because I was asked to bake a cake for a friends birthday and his favorite (since childhood is coconut cake. His comment? This was the best coconut cake I've ever eaten! I've baked it twice and both times heard comments like, "the best cake I've had in years" and "your cake was the star of the party!" I use a basic buttercream to frost it because we're not crazy about the 7 minute version. Only change I made was to use coconut milk in the filling (just because the canned cocounut milk I use has enough to use it for the cake, filling and icing. No sense letting it go to waste!
