Reviewed Chocolate Peppermint Pinwheel Cookies

"After reading all the reviews, I was soooo nervous to even bother. But I bothered. I didn't have the cracking, or the smooshing issue like the other reviewers. I used semi-sweet chocolate with a little butter melted in and a little more peppermint than it calls for. I rolled the dough out on waxed paper then used that paper to help me roll the log up. I used an electrical knife to cut the cookies too.
Overall the cookies were good. I was sort of expecting them to 'wow' me..they didn't, but they were still good. The waiting in between was what made the cookies seem like they took forever but of course a mom always finds other things to do around the house in the mean time...more work than a normal cookie but who wants a normal cookie for Christmas time?! Also I would double the recipe next time...didn't make as much as it said.
