My Activity

Reviewed Mexican Meatball Soup

"Very basic, easy and fun to make! I used store bought vegetable broth, Wolfgang Pucks is a must for me, it was delicious, get them on sale! I didn't want to overpower the freshness of this soup with cumin as suggested, but you may need more salt. The one chili didn't add spice, so no fear there. Gave it 5 stars because without the extra salt, my friend still drank her bowl dry, even after seconds! Here are the only changes I made...
My additions:
-fresh corn on the cob, cut into little mini cobs (or even cut from the kernel added in with the meatballs and zucchini.
-more salt and pepper in the meatball mixture! Next time I'll try Montreal hamburger seasoning.
-serve with fresh sliced lemon!
-serve also with more chopped cilantro as a garnish, really brightens it up!

I am half Mexican, and thought this tasted extremely authentic, particularly with fresh cilantro and lemon added as a garnish at the table. I also serve with warm corn tortillas to roll and dip inside.
