"This was very good. It was a dish that wasn't too filling, but very satisfying on a very warm day. I didn't have mango, so I substituted jarred peaches instead. Reviewed Pork Chops Stuffed with Sun-Dried Tomatoes and Spinach

"This was delicious! To insure that it was fully cooked through, I browned both sides of the chops on the stove first, then stuck the whole pan into a 375 degree oven for about 10-15 minutes while I made the mashed potatoes. By doing this, the pork was fully cooked and the stuffing was hot. Make sure to cover the pan with foil while in the oven,"
