Reviewed Mozzarella, Raspberry and Brown Sugar Panini

"Delicious! I don't have a panini press, so I used my George Foreman grill. It worked very well. This recipe would work with any type of jam, but raspberry lends itself best to the other flavors. Can't imagine this without the rosemary. The sandwich is a bit pedestrian without it. The rosemary adds elegance."

Reviewed Rice Pudding with Coconut Milk

"This is quite good, for rice pudding. The lime really adds a great taste. I was very careful to use only the zest and minimize any of the white, bitter part of the lime. I am not sure where Sandra shops, but I want to shop there. This cost me quite a bit more to make than she estimated. It cost me $9.24 to make four servings, not including the rice, brown sugar, and vanilla. She said it cost $4.56 including everything. My expenses were: Coconut milk: $4.24 (2.12 per can). Lime: $.68 Mango: $1.98. Shredded coconut: $2.34. Of course, I did not use all the shredded coconut or all the milk, but I still had to buy it for this recipe. And, as I mentioned, this does not even include the cost of the rice, brown sugar, or vanilla. So this recipe is tasty if you like rice pudding, but it is not as cost effective as I would like.

Reviewed Round 2 Recipe - Coconut Chicken Soup

"This soup is totally yummy--and very close to the chicken coconut soup I have had in Thai restaurants. The flavors blend beautifully. For Thai food, however, it is not hot at all. One serrano pepper adds nice flavor, but the soup was mild. As a lover of heat, I would probably add at least one more pepper the next time I make this.

Reviewed Basil Chicken

"This dish was just okay. It looked really good when she made it on her show, but my family and I found it rather bland, even after I doubled the sauce. Most Thai dishes I have had in restaurants are full of flavor and have some heat. This version is good perhaps for kids or for those who are just being introduced to Thai flavors. For those who love Thai food, it needs to be kicked up a notch. This could be really good, but next time I make it I will probably triple the sauce, add more basil, and add another serrano pepper.

Reviewed Hurry Up Chicken Pot Pie

"I adore this recipe. I made it tonight and it tasted even better than I imagined. Although I am not generally inclined to make (or eat) chicken pot pie, I saw Paula make this on her show and I thought it seemed like a good idea for a cold January evening. Based on other reviews, I left out the eggs (simply because it saved me a step) and added onions and mushrooms. Other than that, I followed the recipe as I saw Paula make it on the show. The ingredients cost me about $14 (and that included the chicken, the entire box of biscuit mix, 4 sticks of butter, an entire bag of carrots, a small onion, the soup, the stock, and some mushrooms). I overcooked the chicken, but I can't blame that on Paula. The flavors were amazing--so warm and comforting. This made enough for four large servings. I will make this again and again- no question. Thanks for this!
