Reviewed Chicken Enchiladas

For this dish, I used blue corn tortillas, and for the cheese, I used habanero jack to give it a little extra zing. When I cooked this, my roommates devoured it, and then left me to do the dishes! I did enjoy the hint of the cinnamon and the smokiness from the cumin. Poaching the chicken in the stock with the bay leaf was a wonderful idea as well"
