Filling was tasty...fennel and rosemary is a great combo with the pork, but stuffing was a huge challenge to get to stay in the roast. The high roasting temp meant the outside was dry by the time the center was done. I'd salt the filling as well as the roast, add some breadcrumbs to the filling, and lower the roast temp.
