Reviewed Chocolate Truffles

I made these for a party and they were a hit. I used several different coatings (confectioner's sugar, cocoa powder (Dutch processed), chopped almonds, and melted chocolate) to make a few types of truffles. I like this easy way of making a ganache.
I agree with another reviewer that the original recipe produces a fairly bitter and dark...

Reviewed Ciabatta Stuffing with Chestnuts and Pancetta

Comes out perfectly browned and moist. Just the right amount of rosemary flavor for me. The parmesan and egg is a great addition.
I used fresh, roasted chestnuts and omitted the pancetta. I also used rosemary focaccia instead of ciabatta. ""

Reviewed Blueberry Buttermilk Pancakes

The overall recipe for the cakes is good; they turn out very fluffy. The flavor of the cakes is too heavily buttered for me, however. This is most likely due to frying the cakes in butter. I'd skip this step in the future. A nonstick surface does just fine for me.
