"I've never had gumbo before but this dish delicious and packed with flavor. I used chicken thighs instead of breast. As wells as I used straight beef broth instead of the boullion with water. I would make this again, great meal for a freezing cold January day in Cleveland. You definitely need to simmer for 2 hours to develop the depth of flavor.
