This was delish. I made one for my family and froze another (unbaked) and gave that to my sister and her family. We all loved it. It was so easy and the flavors were great! This is definitely my go to recipe for a make ahead breakfast casserole.

I give this recipe a "meh" rating. I followed the recipe exactly as this was my first time making this specific recipe. The cook time listed is grossly underestimated. I baked according to directions as stated, then re-covered and baked for an additional 45+ minutes. I did use my mandolin and sliced the potatoes very thin, so that was not the issue....

My husband and I liked this. The only "off" thing for me was that there seemed to be a "smokey" flavor and I do not like smokey. I have attributed it to the pimentos and will omit that the next time I make this. It is very easy and quick to put together.
