"Wow! Needed to use up some pineapple before it spoiled.I can't believe how beautiful, how moist, and how delicious this cake is. My grandmother is the reigning queen of the PUSDC but I think Emeril just gave her a run for her money. Didn't have any buttermilk so I used sour cream, didn't have any rum so I used lemon zest and pineapple juice for extra flavor. Used 2 tbsp less butter because that's all I had and it still turned out amazing! I am so impressed. You gotta try this, it's pretty much fool proof."
