What a winner! I did not use the brine (did my own basic salt sugar brine then let the turkey dry out in the fridge for a couple of days) but I did utilize the cooking method. Crispy skin and a juicy, flavorful bird...what more could we ask for?

I changed this a bit to suit our taste and the results were delicious! Not fans of blue cheese, I chose to use a sharp white cheddar. I also added one large parsnip to the pot - tried this with another of CR's potato recipes and it was delicious so I figured "why not?" - and sprinkled some panko on top with the additional shredded cheese. Perfectly...
