I love these things. Easily served on their own as shrimp cakes. I find about a teaspoon or so of Wondra flour helps keep them together. Also a ring mold or old tuna can ring mold is handy in keeping them together.

The 2 hour rest is key, lets the mixture get nice and sticky."

After I had this dish at Moss' in Moss Landing, CA. I came to FoodTV to find a recipe. Funny that I found the exact recipe(almost).

Charlie Moss' prepares it with scallops and prawns. This is the way I prefer it. They also accompany it with endless garlic bread which is perfect to sop up the wonderful sauce.
