"I'm glad people can do Emeril's version and enjoy it, Emeril is the bomb.
However, I grew up in Haiti and I keep the authentic taste close to my heart, that is somewhat Americanized and not the true Haitian way to make Cremasse. The taste would not take me back, to them good old days, HMMMM!! But like I said, I'm glad it works for most people.
