This is way too much mayonnaise! All you need to do is put just enough mayo to bind the cheese and diced onions together. Also, you don't need to grease the baking dish. This way, you won't have too much oil after you bake the dip.

I noticed that a lot of you who think this is great do not live in the South so you don't know what real Jambalaya is supposed to taste like. I'm from South Carolina and have several New Orleans friends who have fixed the "real thing." This is a good dish but not Jambalaya."

Try this recipe but also put in browned breakfast sausage, some diced mushrooms, and some small shrimp (minus the tails - I also like mine with a lot of sauteed/caramelized onions and then some hot sauce before eating. It's great!"

This is great but it's only easy if you leave out fixing the rice and the beans. The mojo sauce and burrito part of it is great though!

I just focus on the burritos when I make this as that's what I want more than anything - can eat rice and beans anytime or buy Goya brand and fix them out of the box."
