Ued this last year ('12) and it produced the best Turkey ever. Will use it every year from now on. Moist, great flavor! Also, lowered roasting temp. to 275-300 degrees after initial brown off.

Made 180 of these for an open house I catered. A bit difficult at first to get the knack of wrapping Club Crackers loaded with grated fresh parm. but once a system was down it went fairly quickly. Didn't use Danish Ham but used one very close to it. Only suggestion is that if you don't use Danish Ham be sure to put ham slices between paper towels to absorb some of he water they purge the hams with. This way your appetize won't get soggy.
