Thought this recipe was very flavorful and terrific topping for the grits. However, it was a little too soupy and would be better as a thicker consistency. I added a splash of bourbon whiskey which added to the complexity of flavors. I used 2 cups of grits instead of one (according to package directions) which gave the grits a firmer texture. "

The ground chicken was an interesting approach for light fare for dinner. The flavors of the ingredients were an interesting combination. I followed the recipe however I marinated the red onions with Mung Bean Sprouts for extra crunchiness. Nice to try for something new, light and healthy.

This was a quick and simple recipe. I used thighs to give meatiness to the recipe. These take about 10 minutes longer to cook than the recipe specifies. I also used panko crumbs instead of flour and added fresh ground pepper as well. They were nice and crispy on the outside and juicy on the inside. A very quick method for a tasty quick meal.
