Also thought it good enough to be desert...maybe next time with a graham cracker crust. I also added some more orange zest to the sweet potato mix, After TASTING before cooking, thought it a bit sweet for a side (maybe a few too many marshmallows) and thought the orange zest (1/2 T) gave it a good counter balance. Sounds like somebody got up on the wrong side of the serving dish!!! It is all part of the process. These were all consenting adults who are much better cooks than you I will bet!!

Very good recipe. I also used bulgar instead of cracked wheat. I also added 1 1/2 T Lemon Vinegar which helped keep the recipe fresher longer in the fridge. I used asian cucumbers, they are small and brupless (easier on the stomach. Quinoa turns the recipe into a main dish if you like."
