Very good! I skipped the rinsing part and salt and peppered it and gave it an egg bath, dredged in flour & bread crumbs and then put in fridge for an hour. Cooked in hot olive oil both sides and then baked 30 min. with homemade sauce and mozzarella with tented foil on top. Perfect.
