I used peach preserves because it's what I had on hand, and was able to make these without a trip to the store. All I can say, is WOW! They were really good, nice and chewy. Not the best sweet potatoes I've ever had or made, but I will tweak the recipe. My husband didn't like them, but he's not a sweet potato fan anyway. I used 1 t cinnamon and 1 t nutmeg. The potatoes definitely need more salt when coming out of the oven.

I'm glad I read the reviews prior to making the vinaigrette. I think they meant to say 6 T TOTAL (3 T of each). I only used 6 T of olive oil and it was perfect. This vinaigrette is incredibly delicious and equally simple to make. I'm going to make it as a salad dressing the next time I entertain with an Italian meal.
