"These are both easy and absolutely wonderful! Rolling the cookie in the coconut is a bit messy; however, the crunch of the coconut really adds to the flavor and texture. I made them with the coconut but also rolled the dough in sugar, and then added the raspberry jam. Both ways are good!""
