This was a wonderful, flexible dish! It actually cooked in 2 hours,15 minutes for me, and I did it very last minute. I only marinated for 30 minutes, used white wine instead of red, red onions instead of pearl onions, but it was awesome, not tough at all and what wonderful "sauce".
