This is a pretty quick and easy recipe. I only did the Salmon stuffed endive, substituting Bok Choy as my grocer was out.

The key warning is that there is too much salt in the recipe, and extremely too much if you read it incorrectly. ONE tablespoon of salt is too much. As the recipe is written, TWO tablespoons could get into it....

I bought shucked Pacific Coast oysters on sale at the local big grocer. Family was on the road and far too many for an oyster stew. Fried these puppies up and use the Remoulade as a dipping sauce, along with garden tomatoes.

This was a wonderful meal and easy to create.
