Reviewed Chicken Parmesan
"Excellent! and easy. Kids love it. Have made it 3 times in past 4 weeks. Made my own cutlets buy buying boneless skinless chicken breast and pounding out, using a meat mallet(flat side), in a 1 gal. plastic bag. May want to cut large chicken breast in half and don't pound too thin. Also used chopped garlic, packed in water, in jar. Plus used dried basil vice fresh. One time, had to use mixture of dried basil and dried italian herbs due to not enough basil(do not leave out balsamic vinegar). Believe that made sauce better. Suggest preping chicken ahead of time and place on platter in frig, if tight on time, preping takes the longest. Suggest doubling recipe, reheats nicely and makes GREAT! chicken parm sandwiches next day. ENJOY!
