Reviewed Herb Roasted Pork Loin with Parsley Shallot Sauce

"I made this pork for the first time for a function, a sit-down dinner for 35 people. I had never tried this particular recipe, and when asked to do a pork dinner,I was a little apprehensive since, in my opinion, pork is always so dry because it's so lean.
Well, the people LOVED it. I did make the parsley sauce, but tossed it out - did NOT like it, even though I love parsley.. Instead, I started over with butter and cornstarch, added apple cider, and then added parsley, but it much smaller amounts.. The result was that everyone raved about the meal.. I'll definitely make this again, but with my twist on the sauce.
