New Years Eve party entree. I wish they gave a sub suggestion for Calasparra rice -even Whole Foods in nyc didn't have this ingredient, so I used Aborio instead. Super delicious and easy to make! The flavors were on point and I look forward to cooking this recipe again - would be great for a dinner party since the presentation is so colorful!

This was the first dish my husband made for the new year and it was a home run!
We had to leave the potatoes and carrots to simmer for a little longer and next time I would add some kick to the dish with cayenne or paprika.

This recipe is so delicious and simple to make. My husband (a newbie cook) made this recipe in 20 mins. I highly recommend this dish for a quick and easy weekday meal. For the next time, I'll probably supplement with some sauteed winter greens. Yum!
