“Today, 1/11/2011, on "my day off" I made this delicious eggplant parmessan!
First of all, Chef Alex always inspires me 2 try new recipes. Secondly, this dish is to die for!
The sauce is easy and has layers of flavor. The use of the 3 cheeses and fresh basil gives it a depth of flavor that is fantastic!
