I liked the loads of blueberries and used frozen ones which worked great. I think the cake is better with a full cup of sugar and some orange or lemon zest. It is very moist and easy but not sweet or flavorful enough for us. I'll keep making it with those adjustments though.

I made this for New Years Day dinner in a crock pot for about 6 hours, added scalloped potatoes and some fresh side dishes and it was a huge hit. The ham is flavored well and leftovers were fantastic in ham and cheese omelets, soups, and baked egg dishes.

I loved this recipe. I used 2 1/2 cups of gluten free oat flour because that's what I had on hand. It turned out so great! I also added 3/4 cup of cream cheese to the glaze recipe because I love cream cheese frosting with carrot cake. I'll definitely make this for years to come!"
