have fixed this dish a few times. It is so good. I use pork chops that are about 1" to 1 1/2" thick and they are perfect.

This is sooo good! I even made it in the winter with store bought vine tomatoes and basil. I did make Ina's chicken stock ( a huge amount of chicken and veggies...I will make a half batch next time of the chicken stock ) I used a food mill so the soup had a little chunkiness."
