Reviewed Foolproof Standing Rib Roast

Did a small 4.4lb roast. Used recipe almost exactly, only change was cutting reheat to 30 min. Checked oven with thermometer and it was right on, 375 degrees. Roast was medium-well at ends and medium in center with just a bit of medium rare right in center against the rib. Would have liked a mostly medium-rare so for smaller roasts this needs "
