I love easy desserts with no baking required! Although the flavor was good, the texture was a bit gritty. This definitely tasted better the next day, but the texture remained the same. It's very rich and not worth the calories in my opinion.

Reviewed Mini Lasagnas with Sweet Corn and Mascarpone

I made this last night and it was absolutely delicious! The trick is to use good quality pecorino romano and sharp provolone. It makes a huge difference and worth the price. I cut the lemon zest amount in half and added a bit more corn (frozen and thawed) and it turned out great. I will definitely make this again!
