"These quesadillas are the bomb! Yes, they are a lot of work but they are totally worth it if you want to try something different. This is a great recipe to use if you have leftover BBQ chicken. I recommend doing the salsa and dressing ahead of time so the flavors can meld. I don't smoke the tomatoes but roast them in the oven instead. We love it!
