I love rack of lamb and have made this recipe several times now. It has wonderful flavor. I do think the key is searing the lamb first. I enjoy lamb well done but my husband likes it medium rare so I just cook mine on top of the stove a bit longer. The olive crust helps keep it moist. This recipe is a keeper. . "

I made it without the walnuts and went "easy" on the parsley so the flavor of the artichokes really came through. It was easy and delicious. Had some homemade lemon pepper fettuccini on hand, so the flavor of the lemon went throughout. Will definitely make it again.
