My Activity

Reviewed Catfish au Lait

"Very good. I goofed and used catfish nuggets instead of fillets and don't recommend anybody try that one, but we'll have this again with the correct cut of fish. My electric skillet was just too hot to do this correctly so next time it'll be in a pan on the stove. So simple and yet so tasty!"

Reviewed Unfried Chicken

"Excellent and so much better for our diets. I marinated the chicken overnight in buttermilk and hot sauce so the drench just consisted of egg and regular milk. Wonderful recipe and so easy - we'll have it again soon."

Reviewed Pecorino and Bean Salad

"WOW - this is great!! I couldn't find pecorino but parmesan seems to work fine. The dish is supposed to be for dinner tomorrow, but I can't see how it can taste any better then than it does now. I can hardly wait to have it then!"

Reviewed Simply Smashed Potato Cakes

"To use ingredients on hand I made the following changes: fat free sour cream instead of yogurt, regular breadcrumbs and plain russet potatoes - but the potato cakes were still excellent. I had problems getting them to hold together while frying, but they were still excellent and we'll definitely do this again."

Reviewed Perfect Crispy Potatoes

"Excellent and easy way to make diced potatoes. We used chicken broth instead of water and ours were actually done before the oven step but that may have been because of the type of potato we used. This is now our go-to recipe for diced potatoes."

Reviewed Quick Croque Madames

"This was wonderful! For personal preference we would use less garlic, and since I didn't have any Swiss cheese, we tried a mixture of shredded cheddar and chunked up Havarti. Worked like a charm and we'll do this again and again!!"

Reviewed Engagement Roast Chicken

"You'd better REALLY love lemon for this recipe to work for you. The only reason I even gave it two stars was because it taught us the correct heat to roast chicken to have it completely done in all the joints and the flavor of the chicken was pretty good. The amount of lemon in the sauce totally ruined everything we tried to pour it over so we end"

Reviewed Orecchiette with Roasted Fennel and Sausage

"Because of Hurricane Sandy (and the fact that I 'HAD' to make this today!) I substituted so much, but it ended up being a wonderful meal. I subbed with tiny bow tie pasta, bulk sweet sausage, sweet anise and some chopped tomatoes. Please don't be afraid of the fennel/anise - the difference in it between raw and roasted is huge and it's really, rea"
