Reviewed Squash Casserole

"I tried this recipe last night as I just didn't want to saute yellow squash and onions for the gazillionth time. Boy am I glad I did. I absolutely LOVED it. As I am dieting I had to make some substitutions. I only had 3 yellow squash in the house so I therefore halved all the ingredients. Instead of using regular cheese and sour cream, I used low fat on both and as I am trying not to eat white flour I used wheat creackers. I'm telling you this was so delicious I can only imagine what it would have tasted like if I had not been using low fat products.I also cut my squash into rounds and salted them on paper towels to remove the moisture. This is less messy and I could do this ahead of time and just let it sit until I was ready to cook. My only disappointment with the dish was that I only had the 3 yellow squash and not 6 so I don't have as much left over. I guess I'll have to make this again next week. Thanks Paula for a wonderful and tasty dish.
